Mashed Sweet Potato Casserole with Kentucky Bourbon and Vanilla

Mashed sweet potatoes combined with granulated sugar, Kentucky bourbon, and pure vanilla extract. Mixture is spread evenly into casserole dish and topped with miniature marshmallows. Dish is baked in hot oven until firm and marshmallows have melted and browned.

Ingredients -

3-4 pounds Sweet Potatoes, steamed or baked and mashed
1/2 cup Granulated Sugar
1/3 cup Kentucky Bourbon
1/2 cup Unsalted Butter
1/2 teaspoon Pure Vanilla Extract
2 cups Miniature Marshmallows

 
Preparation:

1. Preheat the oven to 350 F.

2. Add the mashed potatoes to a large bowl.

3. Stir in the granulated sugar, Kentucky bourbon, and pure vanilla extract. Stir by hand or with a hand mixer to combine.

4. Spoon the mixture into a lightly greased 2-quart casserole dish.

5. Arrange miniature marshmallows evenly over the top.

6. Bake casserole, uncovered, for 30 minutes in preheated oven.
